Ingredients

3 C all purpose flour
¾ Tsp salt
½ C warm water
1 Tsp sugar
1 Tsp active dry yeast
1 Tbsp oil
½ C warm milk

Preparation

1. Now combine the flour and salt in a large mixing bowl.

2. In a small mixing bowl, combine the water, sugar and yeast. Set aside for 10 minutes or until intense.

3. Add the yeast mixture, milk and oil to the flour. Form a soft dough and place in a greased bowl. Cover and simmer in a warm place for about 1 hour until doubled in size.

4. Stir in the bottom of the flour. Turn to a lightly floured surface and divide the flour into 6 equal balls.

5. Flatten the balls slightly from one side and place the flat part on a greased baking sheet. Cover and let rise for about 15 minutes until doubled.

6. Bake in a preheated oven at 450 F / 200-230 C for 1550 minutes or until golden. Remove from the pan to the wire rack to cool.


Tomato Sauce

Ingredients

1 Tbsp oil
½ Tsp yellow asafetida powder
2 green chilies chopped
1 dry red chili
Puree from 2 large tomatoes
½ Tsp paprika
½ Tsp salt
2 Tsp brown sugar
Juice of ½ lemon

Preparation

1. Over medium heat heat oil in a sauce-pan. Add hing/asafetida and pepper when it is cooked. Add the tomato puree and the rest of the ingredients.

2. Stir frequently, cook uncovered over low heat for 20 minutes or until thickened. Allow to cool.




Yellow Mustard Sauce

Ingredients

1/8th C yellow mustard powder
1/8th Tsp turmeric powder
1/8th Tsp salt
1/2 Tsp sugar
1 Tbsp lemon juice
1/2 C water
1/2 Tbsp oil
1/4th Tsp yellow asafetida powder

Preparation

1. In a mixing bowl, shake 1-6 ingredients together until smooth.

2. Heat oil in a pan over medium heat. Add hing and when it is cooked add mustard paste. Stir frequently, cook on low heat for 15-20 minutes until thickened. Transfer to a bowl and allow to cool.

Patties

Ingredients

1 medium potato, peeled and cubed ½ Tsp each dried parsley and basil
2 carrots, peeled and cut in chunks ½ Tsp yellow asafetida powder
¼ C whole green moong dal 1 Tsp curry powder
½ C peanuts 1 Tbsp soy sauce
½ C bread crumbs ¾ Tsp salt
1 Tbsp chopped fresh coriander leaves Oil for pan frying


Preparation

1. Boil the potatoes, carrots and moon pulses until smooth. (Periodically you can press the three together for only 1 shill) Drain and massage. Keep cool.

2. Peel a squash, grate it and squeeze the juice.

3. In a large mixing bowl, combine the scattered vegetables, crushed peanuts, bread crumbs, spices and other ingredients. Grind into 6 parts until well mixed. (Add more bread crumbs as needed when the mixture is loose). Roll each part into a ball and then flatten it into a smooth round patty about 6-inches thick.

4. Heat a film oil over medium heat in an iron grid or nonstick pan. Place 3-5 patties arranged in one layer. Fry the patties on each side of the pans gently.

How to serve

  1. A few cucumber slices
  2. Tomato slices
  3. Cheese slices
  4. Lettuce leaves

Preparation
Cut the banns in half. Smear the inner parts with two sauces ready. Place the lettuce leaves on the base of the bun, then place the patty, tomato slices, cheese slices, cucumber slices and finally the top half of the bun. Serve properly with a toothpick.
