Lots of Layers Lasagna
Ingredients
1 14-ounce package extra firm tofu | 2 cups vegetable broth, if using TVP |
1 tablespoon lemon juice or white vinegar | 1 tablespoon olive oil |
1 teaspoon salt | 6 cups red marinara sauce |
1 teaspoon garlic powder | 1 12-ounce package lasagna noodles |
1 teaspoon Italian seasoning | 8 ounces raw spinach |
¼ teaspoon ground nutmeg | ½ cup vegan mozzarella shreds |
1 package vegan crumbles or 2 cups TVP |
Preparation
2. To make tofu-ricota, drain and mash in a bowl with tofu mixture. Add lemon juice, salt, garlic powder, Italian seasoning and nutmeg. Set aside.
3. If using a vegan crumble, break into a small frying pan with a small amount of olive oil. Fry for about 5 minutes, stirring occasionally. Once it starts to turn golden and crispy, remove from the heat. If using TVP, soak it in 2 cups of boiling broth.
4. 4. Spread a thin layer of marinara sauce on the bottom of a 9 x 13 inch pan.
5. Prepare dried noodles by spreading tofu-ricota evenly on each piece. Place 1 layer of noodles at the bottom of the pan. Place a layer of spinach on top of the noodles, then break in half the vegan or TVP.
6. Then pour 1 cup marinade sauce, making sure it is evenly distributed over the whole pan. Repeat with the second half of your ingredients. Top with a final layer of noodles, the last cup of marinara sauce and half a cup of vegan cheese.
7. Heat the cover with foil for 35-45 minutes, until the sauce boils. Open and bake for an additional 5 minutes. Allow to cool and set for at least 15 minutes before serving.

Champion Chili

Ingredients
1 cup dried TVP or 1 package vegan crumbles(optional) | 1 teaspoon salt |
1 tablespoon vegetable oil | Black pepper to taste |
1 large onion, coarsely chopped | ½ cup vegetable broth |
1 28-ounce can diced tomatoes | 2 carrots, chopped |
1 small can tomato paste | 1 bell pepper, chopped |
1 jalapeño pepper, minced (optional) | Dry and wash 2 15 ounce cans of beans (kidney, black, pinto, etc.), add one-third cans of broth if not using vegan crumble or TVP |
3 tablespoons chili powder | 1 cup frozen corn |
2 teaspoons ground cumin | 1 zucchini, chopped |
2 teaspoons garlic powder | 2 teaspoons Italian seasoning |
Preparation
Pour water or vegetable broth over a boil and TVP. Set aside.
2. Heat 1 tablespoon vegetable oil over medium heat in a large stockpot. Add the onions and cook for about 2 minutes. Then diced tomatoes, tomato paste, olives (add if any), Using pepper powder, ground cumin, garlic powder, Italian seasoning, salt and pepper) and allow to cook for about 5 minutes.
3. Add the broth, soaked TVP or vegan pieces (if used), carrots and bell peppers. Cover and simmer for 30 minutes.
4. Add the beans, corn and zucchini and cook uncovered for an additional 30 minutes.
5. Adjust the serving to taste on top with rice or pasta and vegan sour cream, if desired.

Easy vegan dinner recipes
Baked Bow Tie Pasta
Ingredients
1 package bow tie pasta, cooked | 2 - 3 tsp salt |
½ cup chopped yellow squash | 1 tsp pepper |
½ cup chopped carrots | 2 tsp Italian seasoning |
½ cup chopped green beans | 1 tsp crushed red pepper |
½ cup chopped broccolis | 2 to 3 tbsp olive oil |
½ cup chopped eggplants | 1 cup mozzarella cheese |
½ cup sliced olives |
Preparation
2. Cook the vegetables until tender.
3. Add pasta and seasoning and cook for 3 more minutes.
4. Preheat the oven to 350 F. Grease a 13 x 9 inch 5. baking dish and add pasta to the dish.
6. Sprinkle cheese on top of pasta.
7. Bake the pasta dish for 30 minutes or until golden brown.

Fried Noodles
Ingredients
Noodles
8 oz whole wheat spaghetti | 1 ½ tsp salt |
1 cup chopped broccolis | 2 tbsp Chinese chili sauce |
1 cup chopped celery sticks | 2 tsp Italian seasoning |
½ cup shredded carrots | 16 soy mean balls* |
3 cups chopped Chinese baby boy choi or any green leaf vegetables |
2 tbsp oil |
Soy Meat Balls
1 cup soy meat (soaked in ¼ cup water and ¼ cup soy sauce for at least an hour) |
3 tbsp egg replacer (4 tbsp hot water mixed) |
2 tbsp flaxseed meal |
½ tsp finely chopped ginger |
¼ cup flour |
2 tbsp oil |
Preparation
2. Roll Say in a flashcid meal.
3. Heat the pan with oil. Pan free until the balls are golden brown cook in containers according to the package already.
4. Drain pasta heat a skillet with oil, cook the carrots and celery for 5 minutes.
5. Add broccoli and chickpeas and cook another 3 to 4 minutes.
6. Add the noodles and seasoning and cook for 2 minutes. Before serving, mix the soy meat balls with noodles
